A fresh carrot salad made with sweet So Sweet carrots, orange and honey dressing, toasted seeds and creamy feta.

Ingredients

  • 2 cups grated So Sweet carrots

  • ¼ cup pumpkin seeds

  • 1 tbsp natural sesame seeds

  • 1 tbsp black sesame seeds

  • 2 tbsp liquid honey

  • Juice of one orange

  • Crumbled feta to taste

  • Salt and pepper to taste

Directions

  • Toast the seeds
    Add pumpkin seeds and both sesame seeds to a dry pan. Toast over medium heat for 3 to 5 minutes until fragrant. Set aside to cool.

  • Prepare the carrots
    Grate the So Sweet carrots into a bowl. Pour the orange juice over the carrots and toss to coat.
