Parsnip fritters with spiced mince

 

Ingredients

Patties:
500g parsnips, coarsely grated
2tbs plain flour
2 eggs, lightly beaten
2tbs oil
salt & pepper

Mince:
1tbs oil
1 onion
1tsp turmeric
1tsp ground coriander
500g minced beef
425g can tomato puree
1/2 c water
1tsp beef stock
2tsp sugar
1tbs fresh parsley chopped

 

Method

Patties:
Combine parsnips, flour and eggs into a bowl, season with salt & pepper and mix well.
Heat oil in a pan, drop 1/3 cup of mixture into pan. Flatten with spatula, cook on each side until crisp. Drain on a paper towel.

Mince:
Heat oil in pan; add onion, turmeric, coriander and cumin. Cook stirring until onion is soft.
Add mince, cook stirring until mince is well browned.
Mix in tomato, water, stock and sugar. Bring to the boil then simmer uncovered until mince is tender.

To serve spoon mince on to a plate  and top with patties. Garnish with fresh parsley Serves 4
