Blue Cod with Parsnip Puree

Ingredients

500g Blue Cod
½ tsp crushed garlic
1 tsp butter
4 servings of Beans

Method

Peel and chop parsnip into smallish pieces – about 1.5cm.
Bring to boil in salted water and simmer until soft and cooked.
Drain water and place parsnip into kitchen wiz.
Add all other ingredients. Pulse until well mixed.
Meanwhile pan-fry the blue cod. In another pan, fry beans with butter add a little crushed garlic for 5 minutes.
Spread generous spoonful’s of parsnip puree on each plate top with blue cod and add some fried beans on top of the fish.
Add your favourite sauce to garnish (we used a butter sauce).

Puree

500g Parsnips, 3 to 4 peeled
¾ cup mayo
A squeeze of lemon juice 1 pkt soup mix (we used Bacon and Onion)
