Ingredients

½ cup milk
2 eggs
1 cup self-raising flour
1 cup canned corn kernels (can use thawed frozen corn)
1 cup grated So sweet carrots
½ cup herbs, I am using mint & coriander
3 tablespoons sweet chilli sauce, optional
Salt & Pepper
Oil for frying
Garnish – Olive oil, lemon, Kewpie Mayo, Salad greens

Directions

1. Whisk milk and eggs together, then add flour and whisk again.

2. Add corn, carrots, herbs, pinch of salt and pepper, sweet chilli, zest from the lemon, and juice of half the lemon. Mix, then place in the fridge until ready to cook.

3. Heat the oil in a pan over a medium heat. Using a ¼ cup of mixture for each fritter, cook until golden on each side and cooked through the middle.

4. Serve with a drizzle of olive oil, slices of lemon, Kewpie mayonnaise and some salad greens.
