Carrot cookies

 

Ingredients

2 cups flour 

1/2 tsp baking soda

1 cup brown sugar

2 tsp cinnamon

1 tsp nutmeg, ground

1/2 tsp salt

1/2 cup sugar 

1 tsp vanilla essence

1 3/4 cup of white chocolate chips

1 1/2 cups of grated carrot

1/2 tsp ginger, ground

1/2 cup ground coconut, sweetened 

1/2 cup of walnuts

3/4 cup butter, unsalted 

1 large egg

1 egg yolk 

 

Method

  1. Melt the butter on medium heat.

  2. Mix the melted butter with the combined dry mix.

  3. Slowly stir through the rest of the ingredients into the mix.

  4. Preheat oven to 180 degrees Celsius.

  5. Place mixture on a greased oven tray in large spoonful’s.

  6. Bake for 15-20 minutes.
