Parsnip & carrot fritters
Ingredients
Coriander
1 cup grated So Sweet parsnips
1 cup grated So Sweet carrots
1 egg
2 tbsp flour
¼ tsp cumin
Method
Remove moisture from grated carrots and parsnips by squeezing into a paper towel
Mix squeezed carrots and parsnips, and egg, cumin and flour in a bowl
Add roughly-chopped coriander
Spoon mixture into oiled fry pan on medium heat
Cook 2-4 minutes each side
Serve on bed of spinach or lettuce
Serve with dressing to taste
