Parsnip & carrot fritters

 

Ingredients

Coriander
1 cup grated So Sweet parsnips
1 cup grated So Sweet carrots
1 egg
2 tbsp flour
¼ tsp cumin

 

Method

  1. Remove moisture from grated carrots and parsnips by squeezing into a paper towel

  2. Mix squeezed carrots and parsnips, and egg, cumin and flour in a bowl

  3. Add roughly-chopped coriander

  4. Spoon mixture into oiled fry pan on medium heat

  5. Cook 2-4 minutes each side

  6. Serve on bed of spinach or lettuce

  7. Serve with dressing to taste
