Ingredients

1 500g bag of So Sweet parsnips
¾ c mayo A squeeze of lemon juice
1 pkt Dill and Wild Onion gourmet dip mix (Herb and Spice Mill)
To make curry flavour dip simply add ½ tsp curry powder

 

Method

  1. Peel and chop parsnip into smallish pieces – about 1.5cm.

  2. Bring to boil in salted water and simmer until soft and cooked.

  3. Drain water and place parsnip into kitchen wiz.

  4. Add all other ingredients. Pulse until well mixed.
